WORK TRENDS FOR 2017

Apart from the usual heels, midi skirts and tailored trousers we wear to work, they are not aways comfortable. Realistically, when wear heels to work my feet are killing me by 3pm and I am effing and blinding by 5pm. Between my moring commuite — which sometime see me walking to the train station due the the terrific traffic build up, running over two floors for meetings, sometimes I just want that weekend comfort with oversize jumper, sneakers, baggie jeans and big coat.

QUEEN CELEBRATES 90TH BIRTHDAY

Today, the Queen will celebrate her 90th birthday, making her the UK’s first-ever nonagenarian monarch. While today is her official birthday, the main focus of the celebrations will be held on her state birthday in June – a tradition started by George II in 1748; born in November, he felt the weather would be too cold at that time of year for his annual birthday parade so instead combined the celebrations with the annual spring military parade known as Trooping the Colour. This year, the event will take place on 11th June, the day after the Duke of Edinburgh’s 95th birthday, and will be accompanied by other events throughout the weekend, including The Patron’s Lunch – a picnic on The Mall for 10,000 people. Pub opening hours will be extended on Friday 10th June in honour of the occasion. Festivities will also be held from 12-15th May at Windsor Castle, culminating with a 90-minute show featuring performances from the likes of Kylie Mino.

Skinny Falafels

Makes 25 falafels

Ingredients:
1 cup millet
1 cup fresh parsley finely chopped
1/2 cup fresh coriander finely chopped
1 garlic clove crushed
2 tbsp almond flour
2 eggs
2 tbsp olive oil
1 tsp turmeric
1 tsp ground cumin
1/2 tsp cayenne pepper
1/2 tsp sea salt
A twist of fresh pepper

Method:
Preheat oven to 180 C.
First cook your millet with 2 cups of water on medium heat.
When cooked and cooled mix the millet with the other ingredients in a big bowl.
Then with your hands make 25 even size balls and place them in a big oven pan covered with baking paper.
Drizzle a bit of olive oil on top and let them bake for 20 minutes.
Serve with mixed green salad and tahini dressing.

Rice Noodle Salad

Serves 6

INGREDIENTS

80 g (23⁄4 oz/1⁄3 cup) dried shrimp

1½ tablespoons very finely chopped fresh galangal

50 g (1¾ oz/½ cup) fresh grated or thawed frozen grated coconut (see below)

200 g (7 oz) dried rice vermicelli

500 g (1 lb 2 oz) cooked medium king or tiger prawns (shrimp), shelled, deveined and tails left intact

6 red Asian shallots, very thinly sliced or ½ red onion, very thinly sliced

large handful of mint leaves, torn, to serve

coriander (cilantro) leaves to serve
